Today, we are sharing the recipe for our crunchy almond & maca cookies, perfect for on-the-go snacking or to share with friends, for an indulgent and nourishing treat.
To create these at home, you will need:
– 1 cup shredded coconut
– 1 cup oats
– 2 ripe bananas
– Heaped tbsp @mindfulbitesuk Almond & Maca Nut Butter and more for filling
Get ready to create a ‘messy-but-worth-it’ tray of delicious snacks:
Preheat oven to 180 C. Blend the shredded coconut and the oats in a food processor or Nutribullet to the texture of thin breadcrumbs. Add the peeled and sliced bananas and Nut Butter and pulse to a paste. Line an oven tray with greaseproof paper and with the help of two tablespoons, form cookies on the tray.
Bake for 20 minutes, cool, and sandwich together with the remaining Nut Butter. Enjoy every moment Mindful Friends
