We didn’t want to give you just one recipe, as this year has given us all so little. We decided to be EXTRA & give you a recipe every day in the running up to Xmas…because 2020 should end with some fun!😆

Say Hello to these Chocolate & Hazelnut cookies

- ½ cup of coconut oil
- ¾ cup of light brown sugar
- 1 cup of plain flour
- ⅓ cup of cocoa /cacao powder
- pinch of salt
- ½ tsp of baking powder
- flax egg (mix together 3 tbspn of water with 1 tbspn ground flaxseed, leave for 5 minutes)
- 1 tsp vanilla extract
- 1 tbspn Mindful bites Chocolate & hazelnut spread
- ⅓ cup of chopped hazelnuts
- ⅓ cup of chopped dark chocolate/chocolate chips

In a large bowl, beat together the sugar coconut oil with a stand or hand mixer until light & fluffy.
Add flax egg and vanilla & beat again.
Add the chocolate & hazelnut spread & mix.
In another bowl, mix together the flour, cacao powder, baking soda & salt.
Stir the dry ingredients in to the wet ingredients until combined.
Add the hazelnuts & chocolate chips and fold again.
Chill the dough in the fridge for 15-30 minutes
Preheat the oven to 170°c.
Once the dough is chilled, use a spoon to scoop out balls of dough, spread out evenly on a baking tray. These will not spread very much, so push down into the shape you require.
Cook for 10 minutes, then allow to cool on the trays before serving.
