It's Day 3 of the vegan xmas gang with @theurbancanteen and today is all about spreading a little chia......⁠

Today's recipe is this Chocolate orange Biscotti Chia pudding. This is a great recipe to use as a pudding or even an indulgent breakfast..... Why not it's Christmas (I'll be using that reason A LOT during December).⁠

Chocolate Orange Biscotti Chia Pudding Recipe | Mindful Bites


Ingredients⁠
• ¼ cup of cacao or cocoa powder⁠
• 4 tbsp of Maple Syrup⁠
• pinch of salt ⁠
• ½ teaspoon of vanilla extract⁠
• 1 ½ cups of coconut water⁠
• ½ cup of Chia seeds ⁠
• zest of 1 large orange⁠
⁠Mindful Bites Chocolate Cantucci Biscotti

Method⁠
•Add the cacao/cocoa powder, maple syrup, salt and vanilla extract to a bowl (sift the cacao powder so there is no lumps) and give it a little stir. ⁠
•Now add the coconut water a little at a time⁠
and keep mixing.⁠
•Add the Chia seeds and grate the orange zest into the bowl, give it a mix until all combined. ⁠
•Cover and place into fridge for a minimum of 4-5 hours but preferably overnight.⁠
