It's Day 3 of the vegan xmas gang with @theurbancanteen and today is all about spreading a little chia......
Today's recipe is this Chocolate orange Biscotti Chia pudding. This is a great recipe to use as a pudding or even an indulgent breakfast..... Why not it's Christmas (I'll be using that reason A LOT during December).

• ¼ cup of cacao or cocoa powder
• 4 tbsp of Maple Syrup
• pinch of salt
• ½ teaspoon of vanilla extract
• 1 ½ cups of coconut water
• ½ cup of Chia seeds
• zest of 1 large orange
Mindful Bites Chocolate Cantucci Biscotti
•Add the cacao/cocoa powder, maple syrup, salt and vanilla extract to a bowl (sift the cacao powder so there is no lumps) and give it a little stir.
•Now add the coconut water a little at a time
and keep mixing.
•Add the Chia seeds and grate the orange zest into the bowl, give it a mix until all combined.
•Cover and place into fridge for a minimum of 4-5 hours but preferably overnight.
