Make these easy healthy banana bread protein muffins, gluten free, vegan, no refined sugar and slather them in our Cashew & Baobab Mindful Bites nut butter :p 


Ingredients:
2 mashed bananas
2 tbsp almond milk
2 tsp vanilla extract
2 tsp apple cider vinegar
3 tbsp nut butter
1 cup buckwheat flour
1 1/2 scoops vanilla vegan protein
1 tsp cinnamon
1/2 tsp salt
1/2 tsp each bicarbonate of soda and baking powder
1/3 cup sweetener


Directions:
🍌Whisk first 5 ingredients in a large bowl, and set aside for 10 minutes
🍌 In a new bowl, stir together all remaining ingredients
🍌 Pour dry into wet, and stir until just evenly mixed
🍌 Portion into muffin cases and bake for 18-20 minutes
